hi, i have seen this video before and tried it, but didn't work so well.
1. do you use all purpose flour or regular flour, but not bread flour?
2. what kind of baking pan do you use?
3. do you cover it while baking as the video says?

I tried this before and it works for me. As for mine, (1) I used all purpose flour (2) in a cast iron pot (3) bake with lid on for the first 30 minutes then another 15 with top off.
i used bread flour before so the dough was very very sticky and could not fold at all
i also used regulat baking pan because cast iron pot with cover is not cheap

Only cast iron pot can make the crust crispy.
