Help! My bun did not show up after her vacation!

My bun just worked for me for 1.5 months. She is a local bun. When I employed her, I promised her to let her go back to Philippines in June. I gave her a one way ticket from Philippines to HK but she failed to show up on her return date. She sent me a SMS saying that she was sick and she can't go back to HK.

Today, I finally found her and she told me that she would not come back. She promised that she would give me a resignation letter in a few days. I don't know whether I should trust her or not.

Fortunately, she has signed an undertaking before she left. Can I use this letter to prove that she breaks the contract and inform the Immigration Department accordingly? What should I do next?

This is my first time to employ a maid. Pls advise.

佢地唔番來你都無辨法, 我有一個朋友又係俾佢中途放假回鄉, 之後一去不返, 另外一個就佢放假,之後個晚都無再番來, 走左老啊.
小叭係06年12月5日出世時重3.23kgs,1個月4.55kgs,2個月6.40kgs,3個月7.72kgs,4個月8.20kgs,5個月8.80kgs, 6個月10.00kgs, 7個月9.55kgs, 8個月10.00kgs, 9個月10.16kgs, 10個月10.45kgs, 11個月10.91kgs
(4個月第一次反身, 5個月坐, 8個半月爬, 9個半月出牙(上面兩只),10個月出牙(上面兩只)12個月7只牙, 11.81 kgs

細叭係09年1月26日出世, 體重6磅半.
4個半月轉身, 5個月識坐, 7個半月出第一只牙(下面)
