What I learnt from cooking class :
- mix gelatine with water, mix well and put the mixture into a steamer to keep it hot
- when the moose is ready, pour the gelatine mixture into it and mix quickly but gently
My experience :
- just mix the gelatine with room-temperature water, mix well
- add the mixture into the moose and mix quickly but gently
Both methods worked well.
