you better give her a one-way airfare ticket to Philippines and open for 14 days (as your maid has a right to stay in hk for 14 days after the contract ends). For the destination to Philippines, better check the contract about her home address stated in contract, if Manlia, then give her a ticket to Manlia airport, if elsewhere in Philippines, then either give her a direct airfare ticket to the place or some mons would give her an airfare ticket to Manlia then an inland airticket to the home place. For your case, do not give her money (this is my suggestion)
In general, you can buy her a airticket or pay money in lieu of the airticket but one point you should make sure is the airticket must open-end for not less than 14 days. You know, they have a right to stay in Hong Kong not more than 14 days after finished contract even they are fired.
After the service contract, both of you and your domestic helper's relationship will end up too. She has her right to stay in HongKong or not [under HK Immigration rules] and she can find a new employer by her own will [she has freedom at that time]. Of course, you know her much and do not want someone will hire her as a domestic helper in HK but we cannot control it. You only can do is give a BAD comment on her Release Letter/Termination Letter/Testimonial/etc.

請問菲菲離職需唔需要通知菲律賓領事館呢??

You should fax a Release Letter to HK Immigration Department. For your safety, I suggest you mail a copy to your district labour department. I do not know whether or not 通知菲律賓領事館.

如果菲菲返郷下唔需要再轉內陸機, 咁要唔要俾"Food and travelling allowance"呢??

According to the service contract, you should pay all the transportation fees to your domestic helper that she can return to her home not only her country.
But no one will pay the Highest fee right. She can take BUS in stead of 內陸機. Do not so silly to pay more. General speaking, one day food & travel allowance is equal to HK$100.
