Maid can change their mind and find job easily. But we are opposite..
If you have enough time, go to find a new one. I was like you, my previous helper was exactly like yours, I'm a single mum and need to work. Monday to Friday all day without anyone at home as I take my kids with me to school, work and come home at the same time with me after 6pm everyday. She promised re-new her contract but I need to give her extra half Saturday off on top of her normal Sunday.
Just one week before her contract finish, she change her mind and left for a new job. I am still awaiting for my new helper at least for another 2 months!!
Even they signed all contracts and applied to the immigration, before to collect the visa, they will still looking for better offer(They think)!! So don't take any risk, go for a new one, I am sure if a decent one will be as good as her, and your son will be soon to get used to the new helper.

I have tried many times that the maid left for other jobs during the time of waiting for her (after signing contract) >.<
