2 cups sugar
8 tablespoons (1 stick) butter
1/2 cup milk
1/3 cup Cocoa Powder
3 cups Quick Oats
1. In large saucepan, combine sugar, butter, milk and cocoa. Bring to boil over medium heat, stirring frequently. Continue boiling 3 minutes, stirring frequently.
2. Remove from heat. Stir in oats. Drop by tablespoonfuls onto waxed paper. Let stand until firm. Store tightly covered.
Topping:
1/3 cup Quick Oats
1/4 cup all-purpose flour
2 tablespoons brown sugar
1/3 cup peanut butter, chunky or creamy
1 tablespoon stick butter, softened
Cake:
1-1/2 cups all-purpose flour
1 cup Quick oats
1/2 cup brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
4 tablespoons (1/2 stick) butter, melted
1 egg, lightly beaten
1 teaspoon vanilla
1/2 cup grape, strawberry or raspberry jelly
1. Heat oven to 350F. Spray 9-inch round metal cake pan with cooking spray.
2. For topping, combine oats, flour and brown sugar in small bowl. Cut in peanut butter and softened butter with two knives or fingertips until mixture is crumbly; set aside.
3. For cake, combine flour, oats, brown sugar, baking powder and salt in large bowl; mix well. In small bowl, combine milk, melted butter, egg and vanilla; blend well. Add to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.) Pour into pan. Spoon jelly by teaspoonfuls randomly over batter. Crumble reserved topping evenly over batter.
4. Bake 35 to 40 minutes or until golden brown and wooden pick inserted in center comes out with just a few moist crumbs clinging to it. Cool 10 minutes in pan on wire rack. Cut into wedges; serve warm.
Vegetable spray
1 slice ham
2 tablespoons shredded Cheddar cheese, divided
2 eggs
2 tablespoons low fat plain yogurt or sour cream
pepper, to taste
Spray a 10 ounce microwaveable ramekin or custard cup with vegetable spray.
Place ham slice in ramekin.
Sprinkle 1 tablespoon shredded cheese.
In a small bowl, beat together eggs, yogurt and pepper until blended; pour into ramekin.
Sprinkle with remaining cheese.
Cover loosely with plastic wrap, turning it back slightly to vent.
Microwave on Medium-High (70%) for 2 1/2 to 3 minutes or until cooked as desired. Remove from microwave but do not remove plastic wrap; let stand for 1 minute. Remove plastic wrap and serve.
~~You can use a microwaveable mug or cup instead of a ramekin or custard cup.
2 eggs
2 tbsp formula or milk
2 tbsp shredded mild cheddar or american cheese
1/2 tsp butter
1) Whip the eggs & milk until foamy. Add cheese.
2. Add the butter to a frying pan. Cook the mixture in pan over medium heat for about 4 minutes. Stir constantly to keep the eggs moist and not crispy.
3.) Cool to warm & serve.
3 apples
1 egg yolk (for babies under 12 months, omit egg yolk and thicken with infant cereal)
1/2 tsp lemon juice
1 tsp brown sugar
1 tsp of water or apple juice
small pinch of cinnamon
1. Peel, core and dice the apple into small pieces.
2. Add to the lemon juice and water and cook over medium heat in a small saucepan for 20 minutes or until soft.
3. Mash or puree to desired consistency.
4. Beat in the egg yolk and sugar until smooth. For babies age under 12 months, omit egg and add infant cereal by 1 tablespoon, until you get the desired thickness.
5. Bake at 350 F degrees for 15 min or until set. Cool before serving.
~~For Mommies who want to bake their own. This recipe is so meaty. Serve it with your baby's favorite pasta & topped with grated Parmesan Cheese. You may freeze the leftovers for another time.
1 pound ground beef
1 pound pork sausage
2 ounces sliced pepperoni sausage
1 green bell pepper, chopped
1/2 red bell pepper, chopped
1 tablespoon minced garlic
2 onions, chopped
2 carrots, diced
2 stalks celery, chopped
1 (8 ounce) can sliced mushrooms
1 (15 ounce) can tomato sauce
2 (14.5 ounce) cans diced tomatoes
2 (6 ounce) cans tomato paste
1 teaspoon black pepper
1 tablespoon white sugar
1 cup beef broth
In a large stockpot cook the ground beef, sausage, pepperoni, green bell pepper, red bell pepper, garlic, onion, carrots and celery. Cook until beef is no longer pink. Drain grease.
In large saucepot, add the mushrooms, tomato sauce, tomatoes, tomato paste, black pepper, sugar, and beef broth and stir well. Pour the meat mixture into the pot. Bring to a boil, reduce heat and cover. Simmer for 2 hours.
