Both banks, law firms and trust company can help you to set up a trust. When you set up the trust, you need to appoint a trustee who will oversee the asset. The trustee may be a natural person or a company. You as the settlor of the trust can put down the thing you want the trustee do into a Wish List (Can change the content if you think suitable). Such as monthly payment to the Beneficiary (could your children or even yourself). The trustee have to act according to it.
Regarding charges and the size of asset. I remember the Bank of East Asia will charge 1.5% p.a. on total asset and the minimum asset size is HK$15mil.
