Last month I stayed at my relative's home and even 11 days is not enough as commented by my children. With a child less than 2 years old you need to spend
1 day at Taronga zoo + opera house+circular quey, 1/2 day at Bondi, 1/2 day at Rocks,
1/2 days at Darling harbour + lunch at fish market+ 1/2 day at China town
1 day -relaxing tour at the local shopping mall including the supermarket,
1/2 day in local park and let child play on the glass without shoes
etc

I have no idea about Wonderland Theme Park.
Blue mountain and Hunter valley is good if you have enough time to explore. Many travel agents in China town organise daily tour to this area. You could have a look here:

I have been to Taronga zoo, opera house, Bondi beach, the rocks, darling harbout and China town, different museum, etc. They are quite worth to go.
Besides it, I would suggest you to go and see Blue mountain and Great Ocean World as well. If you have less time, take one week then you can see them all. If you have more time, I would suggest you to start from Rain forest, Crains, Sydney, to Melbourne. Different down has different things to look.
For my experience, I would prefer travel to New Zealand more than Australia. New Zeland has much more fun.
