If you buy at the shops inside the departure terminal before you leave, then all items are duty free. If you buy at shops in London, you will still have to pay a fee for to the tax refund companies, so you don't actually get all the taxes back.
You can find out which stores are at your departure terminal on the Heathrow Airport website. You can call the stores and ask them to bring in the things you want to buy and tell them when you will be at the airport. Then you can go pay for the items just before you fly back to HK!
