I just hired a bun bun who has finished her contract in Hong Kong. I let her to arrange the new contract. Before she go to the Hong Kong Immigration, you put all your supporting documents, such as financail proof, address proof, etc into a envelop and seal it.

What she will need to do is :
(1) go to the Philippine Consulate to chop the new contract;
(2) go to the HK Immigration to submit the application to "change the employer"
(3) HK Immigration will issue her a letter with the date that she should return to collect the new visa
(4) On that day, she go to collect the new visa with your envelop and the cheque for the levy

I think no need. Otherwise, you will need to go to these places for 3 times.

The maid should know how to do it. If not, ask her to ask her friends. She will collect all the required docs for you to fill in and sign.

So, Before she finished her current contract :

(1) you and the maid complete and sign all the required docs. Choose a morning on Sunday to do it and the maid will go straight to the Phillippine Consulate to chop the contract. She need to pay HK$ 3XX;
(2) After she finished the contract, ie the day she leave her current employer, she should go to the HK Immigration to submit the application form, no money to pay this time. The HK Immg will give her a letter to ask her when to collect the new visa, normally 3 weeks;
(3) On the date to collect the visa, you give her the sealed envelop and the cheque for levy. She need to pay HK$ 160 this time.

Also you need to check if the maid has been taken her annual leave or will take leave before start to work for you. If she has not take her annual leave and wants to start to work for you, the HK Immd will give her 1 year visa. She will require to take leave within 1 year. By the time, she return from leave, the HK Immg. will give her another 1 year visa so as to fullfill the 2 yr contract with you.
