Roast Beef with Rosemary & Red Wine Gravy Method:
1. Preheat the oven at 180C.
2. Colour and seal the beef on all sides, season with salt + pepper.
3. Roast the beef. Turn the beef over halfway and sprinkle chopped shallots, garlic and rosemary.
4. When the beef’s done, remove it from the tray and cover it with foil for 15 mins.
5. Gravy: Heat the gravy > add red wine > cook reduce until almost dry > repeat this 2-3 times > Add 300ml chicken or beef stock > simmer for 5-10 mins > seasoning with salt and pepper.
