it depends on her salary!
I write the term : 如果佢唔放rest day,同意補水116(or 118 I forget) inside her contract!
However, I usually pay her 120 per day.
And she is happy about it.
What I do is: for example.
Ask my yan yan work on 初一,初二and 初三. Then, give her holidays on 初四,the next sunday and the next next sunday and tell her these 3 days is for her 初一,初二and 初三 holidays. Then, pay her 3 days ($120 x 3) at this month's salary for her extra working for 3 days!

Why do you think it's too mean to swap her holiday? There should be a lot of Hong Kong people who ever work on their holiday when necessary and get day-off some time later.
BTW, it's Chinese new year. I don't think it means a lot to them.
