If the pedi considers that your son's fine, it should be okay. Sometimes, baby grows faster at the early stage and slows down later. But, if your baby is fully formula-fed, you should try to give him some water in the day. In US, all doctors say no water for baby in the first year. However, I do give water to my son who was half-formula-fed and even to my daughter who is totally breast-fed. Since your baby is 2 months old already and it's going to be summer, I would suggest you to give him some water in daytime especially when the weather is hot. When I fed my son, I gave him little bit of water after he had his milk to clean up his mouth. During hot day, I gave him a bottle of water before his nap time (of course, need to change his diaper afterward). First of all, it soothed him to sleep and it also established his good habit to drink water. Some kids do not drink plain water but juices only.
As your son is still young, do not give too much water now but you can start to introduce it to him. It's good to avoid cavity and it can help him to poo easier. Formula baby usually has problem of constipation. When he grows older (say after 4 months), his appetite would be more stable and he won't grow so fast when he becomes very busy to explore the outside world.
How many times you feed him now? You can stretch the interval of 2 feedings gradually if he really gains too much. But, since the pedi said that he's still in the range, you can just keep an eye but not have to be too worry. Also, you can add a little bit more water into the formula. Some parents misunderstand the instruction and add not enough water into the formula. As a result, the baby is drinking thick milk. The correct way is, says the instruction states 2 scoops for 4 oz, you should put 2 scoops of formula plus 4 oz of milk, instead of putting 2 scoops and add the water up to 4 oz. It makes a little bit of difference - it turns out to be 4-1/2 oz of milk if you do the former way. That's what my kids' pedi and my friend who is a nurse told me.
