I agree that you should ask your maid directly. Depending if you want to keep her, I would "scare" her by saying that you will report to the police. Maybe you should report to the police (so there may be a record against her name)!
Did you hire her through an agent? If so, maybe you should speak with the agent about it.
If I am you, I will start looking for a new maid. I don't think I can have someone whom I don't trust in the house, even if it means paying her an extra month (but like you said, very 唔抵!) Also, if you are going to get rid of her, you should consider putting her name on the black list so other mums can be aware of her.

Speak with her first. But appears that you need to fire her instead as you would not sure whether similar stuff would happen again. Moreover, if she is near the end of the contract, then it's fine. But if you have just started her contract a few months ago, it's worth to get a new one as it is hard to maintain or rebuild the trust again.

Meanwhile, I suggest you to buy a mini safe to keep all the money and valueables. I got one also from Pricerite (~$700). I keep all the $$, important documents inside.
To me, I would fire her immediately but without one month payment. As this is your trap, you may tell her that you knew of her practice already for long. So, ask her to write a resign letter otherwise you call the police.
As you are taking care of Ian yourself, I don't think you have a big problem for training another maid. So, don't give her any chance coz I don't think it would help.
Don't be so kind to the maids as they won't appreciate it at all.........
By the way, local maids are more expensive but hope you understand that it's not about local or non-local, it's all about their personality.

BTW, 本地工人幾貴,我次前都有consider請本地工人, 好似要成$7k/month (but I can't really remember, only that it was expensive),但係你probably only need her a few hours a day, so maybe cheaper.
The letter she signed is no use. I suggest you ask her to write a resign letter but the date is empty. By the date you don't need her, you don't have to pay her 1month notice.
The excuse that she has is also a lie, this is not a one that could change. Please don't keep her for long. It's a bomb, take good care!!!
