1.pre-heat oven to 165"c
2.pat dry the turkey
3.rub butter all over the turkey
4.sprinkle pepper and herbs (preferably rosemary and thymes) all over the turkey
5.place chopped carrots,onion,red pepper (plus any vegetables you like) on the roasting tray,lie them flat as a layer
6.put the turkey on top of the vegetable layers and drizzle olive oil over the turkey to avoid over-burning by the butter
7.roast for 30mins/lbs
8.take out and cover in foil when done.rest for 15 minutes before carving
**use the juice on the baking tray to make the gravy
