薑醋

薑醋的做法:

材料:

雞蛋
豬腳 (豬手比較多肉,但D肉比較"鞋"同實)
甜醋 (甜醋和黑糯米醋為10:1)


1). 將薑洗淨, 去皮 (將皮放於太陽下晒至乾身,用報紙包好, 放進雪櫃, 用作坐月煲水沖涼洗頭用)

2). 將薑放於太陽下晒至乾身

3). 之後用刀將薑輕輕拍扁, (少少裂開就可以, 比較容易入味)

4). 將薑落鑊, 不用加油, 用慢火炒至乾身, 見少少燶就可以

5). 將薑加甜醋, 不要加水, 用中火煲滾, 息火, 放置一邊備用, 不用放進雪櫃

6). 隔日重覆煲滾動作, 至薑"林"為止,

7). 如喜歡食較硬的蛋, 可於煲薑一兩次後加蛋, 相反, 喜歡食較"林"的蛋, 可遲D加 (加蛋程序: 先將蛋烚熟, 去殼, 加入薑醋用中火煲滾, 息火, 放置一邊備用, 不用放進雪櫃, 隔日重覆煲滾動作)

8). 豬腳於BB出生後先加入薑醋, 因豬腳好快"林", 煲兩三次就"林", 所以不用太早煲

9). 煲豬腳程序:

a) 先將豬腳飛水, 洗淨, "晾"乾水,
b) 將豬腳落鑊, 不用加油, 用慢火炒至乾身, 見少少燶就可以
c) 將豬腳加入薑醋用中火煲滾, 息火, 放置一邊留用, 不用放進雪櫃
d) 每日重覆煲滾動作 (唔夠甜醋, 就要加醋)
e) 煲兩三次後, D豬腳就"林", 可食用

***當豬腳煲"林"後, 不宜再煲滾, 因為再煲, D豬腳就會溶化入薑醋,
所以適宜食幾多, 蒸幾多.

****記得第一煲薑醋是最有營養最補的, 如要送給朋友食, 就要將第一煲薑醋約分三分一出來. 三分二留給孕婦食用, 另三分一就可不斷加蛋及豬腳送給朋友食

***蛋及豬腳可不斷加, 但薑就不可以加,
因為薑要較長時間煲"林", 否則不好食

***唔夠甜醋, 就要不斷加醋, 不要加水

P.S. 想甜嘅話去 唐人街 雜貨舖買"黑片糖".. 唔係一般片糖.. 加後會甜
P.S.2 唔加水原因: 因為會發霉
P.S.3 太杰點算好?? : 加八珍甜醋, 同到滾就熄火, 唔好不停煲, 記得唔落得水

(1) 係咪一定要用傳统瓦煲 (沙煲)? chinatown 邊度有得買?
(2) 我平時係用嗰種外面白色, 有花的, 裡面都係白色, 呢種煲可唔可以用嚟煲醋?
(3) 要幾時開始煲? 啲 ginger 浸幾耐先林?

=> mostly 都用沙煲架
chinatown 邊度有得買?
=> 寶榮行咪有囉

(2) 我平時係用嗰種外面白色, 有花的, 裡面都係白色, 呢種煲可唔可以用嚟煲醋?
=>我有3煲薑醋, 其中一煲係用你講緊呢隻.. 啲醋味道一樣

(3) 要幾時開始煲? 啲 ginger 浸幾耐先林?
=>一般產前1-2個月要批好薑, 晒好, 同開始煲.. as BB可能早出世呢..
Amanda嗰時, 我煲薑醋得1星期.. 真大鑊, (amanda 係34 weeks 出世)..so, 我煲醋好唔掂呢...
**你要唔要一煲, 我有"現成" 架.. Rachel 生BB時,我都俾咗一煲佢, 你 memorial day Sunday 嚟唔嚟BBQ, 我可以俾一煲你呢..

多謝你先, 但我 memorial day sunday 未必嚟到, 老公晨早話佢同事有嘢搞, 但未 comfirm - 激 c , 所以我一路都唔敢覆你 lor

想問吓 ... ...
(1) 咁係咪 if 薑已煲林, 就落豬腳, 然後放陰涼地方, 等到生咗 bb 先落蛋?
(2) 豬腳林咗就唔好再滾, 萬一發 mold 咁點算?

寶榮行﹐ 依麗莎伯街夾Canel﹐ 向萬昌方向行﹐ o係正中間位﹐ 對面係一間室內停車場﹐ 妳一定唔會miss。

我奶奶上個月已經開始煲啦﹐ 我諗妳開始批定薑差唔多。 記得洗左先批﹐ 因為D皮要留來煲水﹐ 唔洗會有泥。 另外係戴膠手套批﹐ 唔係夜晚對手會好熱好痛

==> 豬腳等到BB出世至落, 要等幾日至入味, 你鐘意硬疍定係"林"疍, 硬就早啲落, "林"就食之前一日落..

(2) 豬腳林咗就唔好再滾, 萬一發 mold 咁點算?
==>要多買一個細瓦煲, 食幾多煲幾多.. 薑醋唔會發霉, 因為冇水份架..
冇豬腳嘅醋, every week 番滾1次啊!

唔駛急.. 你9月至生..right? 一定有時間俾你呢..
咁你唔駛煲醋.. 只係到8月買薑, 批皮.. 留嚟沖澡同煲薑飯..

Hi, Nillie,

Now, I am using 外面白色, 有花的, 裡面都係白色煲 to 煲醋.
I hear that I have to put the cover on whenever, but there is no hole on that kind of 煲, and a lot of 倒汗水 is dropping dwon during boiling. Do you think that 倒汗水 will cause 煲醋 發霉? Or I need to move the cover away during boiling?

you have asked the same question i asked Nillie before ... hehe ... the pot you mention is OK to 煲姜醋 ... the one that Nillie gave me is in the exact pot you mentioned

and about the 倒汗水, just remove the cover when you simmer the 姜醋 ... after it boils, let it cool down and don't put the cover back on until it is completely cool ... the first time i simmered the 姜醋, i didn't remove the cover, so some 倒汗水 has dropped into the 姜醋. i was so scared and asked Nillie for help ... good that i let it simmered for a while and so far, the 姜醋 did not 發霉 and still smells very yummy
