I just come back from HK and stayed there for 3 weeks. Yes, the ticket is only 10% of adult fare but baby has no seat, nap only.
If possible, it is not recommend to bring your child as early age. I took my son to Florida when he was 4months and HK when he was 7months. I did it because I was on EI and that is the only time I can have such long vacation!
In Disneyworld was fine but I was the one who ran around to get fast pass for my daughter (5yrs old) and she enjoyed it very much. Most of the time I was breastfeeding and resting when I was in Disney!!
In HK, it was terrible as the weather was cold, I just bad luck as I went there before Chinese New Year. I cannot really find a place to breastfeed except when I was eating in restaurant.. I am not asking a nursery room for breastfeed but just a bench is hard to find!! I cannot use the baby stroller as it is too crowd, so I end up carry him all on my chest whole day!
But if you really miss your family, it is good to use that long holiday, but just bear in mind that it is not easy to travel with infant. We were all suffered from jetlag and it took us whole week to recover on both HK and Vancouver!

I brought my 2 kids back to HK when they were under 2 years old. Just to share my experience.
1. As you see the flu breaks out in HK now, March is always not a good time to go as well as the humid weather is very bothering. A/C on --->freezing. No A/C---> cannot breathe! I find Nov-Jan is the best time for me.
2. If your baby is not too 'heavy' , buy a forward carrier to carry your baby in front of your chest. It also can act as a 'seat belt' while you are on the flight.
3. Make sure to bring some 'canadian water' to HK in order to mix the HK water to make food/milk for you baby so as to avoid 'bellyache'. Coz the water is different. (soft/hard)
4. If your baby can eat bread, bring 1 or 2 as his/her meal. I will strongly recommend the 'food ' for the baby is as simple as possible cause the space is so tight on flight. Base on my kids, milk and mommy is the best!
5. Bring a little hot water flask and 1 or 2 of his favourite toy.
6. If daddy is not going with you, daddy need to type an acknowledgement letter that he is agree the baby to go with you and you will be the only legal person to take the baby to travel. Have his name and all tel #s on it. ( I have been asked once and you better have one just in case.)
7. About jet lag, expose your baby and yourself to the sun as much as possible to let your body's biological clock to adjust the time difference. Drink a lot of water.
8. Check your baby's formular whether it's available in HK.
Don't worry, be relax! Customs,airlines and other people are very courteous to passenger with baby.
I just brought my 9 mons old daughter back to Taiwan in this Chinese New Year. My experience is horrible and terrible (coz's from Van-Taiwan, just by my own), when we arrived, a few people asked me "how can u make it", and I still pretended "Why not, it's not that bad!
I've never eaten any meal in the flight, no time, no hand, I carried her straight 7 hrs.
I brought a bottle of hot water, coz's my friend is working for the airline, she told me don't even drink a water on plane unless it is a brand new spring water which is opened in front of you.
If you bring the baby with you, I don't think you can do any shopping as well.

It is true that it is very hard to do shopping if you have a baby. Regarding the flight, it is better to go on low season when there is empty seat next to you, then you can let your child to sleep flat. Water, from our experience, there are plenty of supply and all of them are bottle water which is sealed.
Dont expect people will help you as it is not always happen in this world.
