You should give one month notice to the domestic helper and this 'one month notice' can not 扣大假. For example; 1 May 04, you give a termination letter to your domestic helper, then one month notice means she will quit the job on 1 June 04. In this month, she cannot take any annual leave.
But in your case, now is 18 May 04 and the contract end date is 9 July 04. Your notice period over one month, you can ask her leave your family early.[扣埋大假]
You should fax the termination letter to HKImmigration department on the day she leave your home.

Domestic helpers must take their annual leave within the 2-yr contract. In your case, you can do it. But I suggest you ask HK Labour Department first.
