My kids are allergic to eggs and dairy. This banana muffin recipe is really good. They all like it. The texture is very soft and you cannot tell it does not have egg in it.
Ingredients:
All purpose flour - 3/4 cup
Ripe bananas - 2 big ones
Cooking oil - 1/4 cup
Sugar - 1/4 cup (I use brown sugar)
Baking powder - 1/2 teaspoon
Baking soda - 1/2 teaspoon
Vanilla essence - 1/2 teaspoon
Walnut - 1/2 cup (optional)
**My kids do not like walnut. I put 1/4 cup chocolate chip instead. But need to cut down sugar if you put chocolate chip.
Procedures:
1. Preheat oven at 180 C
2. Sift flour, baking powder, baking soda and keep it aside.
3. Peel the skin of bananas and mash it well.
4. Add oil, mashed bananas, vanilla essence in a mixing bowl and mix well. Fold in sugar and mix well until sugar completely dissolves.
5. Add all flour with baking poweder, baking soda slowly to the mix of #4 and fold. Do not over mix.
6. Add walnut and give a quick stir.
7. Grease the muffin cups or use liners. Add the batter to it.
8. Bake at 180 C for 20-30 min.
