buy 'water crab'水蟹, pearl rice, ginger, pepper, chinese wine, spring onion
soak rice with water and a bit peanut oil
dissect crab, wash well, season with wine, pepper, grinded or sliced ginger together
for heavy taste, fry ginger slices and spring onion cut with a bit oil and throw them to rice with water.
Boil to the 'standard' that you like. at least take 1.5 hour. to save gas, boil to boiling and turn off gas for 20 minutes for about 4 times. That takes about 2.5 hours but save money.
pick up ginger nnd spring onion cut
throw crab to congee, boil about 10 minutes.
add pepper/spring onion dices if you like.
