I face the same problem about 3 years ago. My maid ask to return about 1.5 year after the contract. The answer from Immigration was:
1) Part of annual leave can be taken in advance, but when contract ends, she must leave HK for 7 days paid by u. If not, she has to leave within 1 year after contract ends, paid by u. So she cannot take the total 2 weeks in advance.
2) You have to pay her a return ticket when contract ends. So I advise u not to pay her holiday ticket.
3) You cannot renew in advance in Dec, but you can terminate her contract and start a new one for 2 years effective in Dec.

You misunderstood me. I mean one-way return ticket must be paid by employer when the contract ends. So if she pays for the holiday ticket too, she will be paying double.
