for African Lion Safari - you have to drive your own, or nowadays, so many chiense tour operator will run the day tour, you may also join them for such event...
niagara falls have lots of things to explore... so you could easy spent 2 nights over there, especially u come in summer , could go to the great wolf lodge to enjoy a day..

i am not familiar with the hotel, but i heard most chinese come and stay in motel 8 which is located in the heart of down town and close to all places of interest.
