菲姐快將放假, 叫我寫封employment proof比佢for immigration purpose, 証明放假後會繼續返我屋企工作, 她只做左一年.... 請問我是否一定要給她??

No, I never wrote that for my maid. She can use her contract to enter HK again.

my maid also worked for 1 year only and will go back to Philippine for holiday,
can I only give her 5 days holiday and ask her to bring forward the other 2 days to next year?

No need
She use her passport with the VISA in it and the Employment Contract can be entrance to HK.
The enployment proof is needed only for apply to Canada as a Live in Caregiver.
