Lean Pork Soup with Carrot, Water Chestnuts and Red Dates
Ingredients :
carrots 450g
water chestnuts 300g
red dates 15
lean port 450g
water 12 bowls
salt
Method :
1. Rinse and scald the lean port. Set aside.
2. Cut carrots into pieces and rinse. Remove the stem of water chestnuts. Seed the red dates. rinse.
3. Bring water to the boil. Put all ingredients into a pot. Cook over high heat for 20 minutes. Reduce to low heat and cook for 2 hours. Season with salt. Serve.
This soup strengthens the Lungs and Spleen, expels phlegm and alleviates coughs.
