Hey, but ho ma hasn't told you the secret of making a good batter, what temperature to use to do the frying and for how long, how to cut the fries into perfect shapes...

最important is the batter & temperature ..even now, hoba doesnt let the helper to fry the fish unless he's not around..
hoba's batter is quite light & crispy compare to others i've eaten
and we normally do the fresh one in order to keep the quality & customers are willing to wait!
