Lean Port Soup with Carrot, Water Chestnuts and Red Dates (by Karen Mok's Daddy)
This soup strengthens the lungs and spleen, expels phlegm and alleviates coughts.
Carrots 十二兩
Water chestnuts半斤
Red dates 十五粒
Lean pork十二兩
Water半斤碗
Salt
1.
Rinse and scald the lean port.
Set aside.
2.
Cut carrots into pieces and rinse.
Remove the stem of water chestnuts.
Seed the red dates.
Rinse.
3.
Bring water to the boil.
Put all ingredients into a pot.
Cook over high heat for 20 minutes.
Reduce to low heat and cook for 2 hours.
Season with salt.
Serve.
