I really forgot one thing that is very important, my son is going to 4 years old, he holding UK Passport but when he is going and coming back from overseas, does he need any other documents (eg. Brith Certificate etc....) to prove that he is resident of Hong Kong????

I believe your son should have HK ID card, when you travel (to China or overseas), you need to bring your son's HK ID card and passport, that's fine. I think you knew that UK passport also no need visa for Japan, when you back to HK, you just need to present HK ID card and Passport to Immigration Dept.
To play safe, I used to bring a photo copy of the passport, ID card and my daughter's birth certificate with me when travel and keep it seperately, this is my personal approach only, just for your reference.

I think I will bring along with his Birth Certificate and passport, anyway, I will check with Consulate and Travel Agency.
