my 99 cooking method :
花膠, will be LOUD 起 after boil for sometime @soup, then 炆 with 海參, 蠔油, 再用生菜墊底. very good!!
in fact, i only know, but never touch!! :mrgreen:

my colleague teaches me :
Soup
- use 'chon & ginger' to boil the 花膠 first, then keep it overnight
- next day to use it together with mushroom, dried scallop, chicken/pork muscel
