Oyster Parcel
Ingredients:
640g oyster(可以轉帶子)
200g cooked shrimp
1pc spring onion(呢度指大蔥)
Some chopped parsley
2tbsp cornstarch
1/2 cup white wine
250 ml cream
Some pepper
Some poached Chinese chives
Egg cake ingredients:
3 pcs egg
100g sieved wheat flour
1 tbsp butter
1 cup milk
Some sugar and salt
Method:
1. Mix the oysters with cornstarch. Then, rinse. Pan-fry in wok with pepper until done. Remove and keep the sauce.
2. Mix the egg cake ingredients. Then, pan-fry with butter. Set aside.
3. Fry the spring onion with oil. Add in conrnstarch, white wine and oyster sauce. When the sauce reaches the boiling point, then, add in oyster meat, shrimp and cream to make the stuffing.
4. Put the stuffing into the centre of the egg cake. Then, wrap with chives. Ready to serve.
Marinade:
3-4 pcs chopped garlic
1tsp salt
2tsp sugar
1 tsp curry powder
1 tsp cumin seeds
1 tsp paprika
some thyme
some ground pepper
2 tbsp olive oil
1 tbsp lemon juice
1 tsp Bovril(保衛爾滋味湯料,超市有售)
Method:
1. mix all herbs and chop. Then, mix salt, sugar, bovril with olive oil and lemon juice.
2. Shred the pork loin and marinate with marinade for several hours or even overnight.
3. skew the pork loin and put in pre-heat oven and bake at 180-200C for 20-25 minutes until golden brown. Ready to serve.
