Which part of pork you bought, I told the pork seller that I want to buy a piece of 有骨五花腩 as trying to make 自製燒肉. He guided me to choose to a peice about 1 斤2兩not too fat.
Even we bought 燒肉in 燒腊shop, some parts still fat and not cripsy.
Before you bake the pork, the skin should be air dry enough.
