i use 'rasonic' electric clay pot (the one with clear plasitic container). it takes me 1 hour to cook, not rice soaking needed. i put the minced pork together with the rice. the congee is very smooth & tasty. no stickiness, no stirring, no checking on the stove!
my bun-bun eats the left over because it's delicilous!
i boil it once a day and it can keep warm until the evening. for the vegetable, i usually make 2 days reserve, boil and mince and freeze in the freezer until use. just add 2 cube to the hot congee before eating.
the claypot is also good for making pumkin congee.
