General speaking, you can ask her leave your home anytime during the Notice Period BUT you must pay the pro-rata wages in lieu of the notice. For example, if she still has ONE week of the notice period, you should pay HK$3270 x 7/30.

If my maid plays tricks, I would also play tricks like asking her to go back and forth to buy things, carry a lot of things, or thoroughly clean the whole apartment everyweek e.g. handwash curtain, exhaust fan, carpet, iron all the shirts, ....

Did she write you a resignations letter, or just verbally tell you that she resigns ?
You MUST get hold of a resignatiou letter from her. Otherwise she may well turn back on you to say that you haven't paid her 1month's $$ in lieu of notice and sue you for it.
