Phuket is mainly in swimming and sunbathing. You could also join local tour for snorkeling. For island sightseeing, you can hire a car w/ driver. If you prefer shopping, you could take Thai Air (TG), they have direct flight to HKT and free “stop over” in Bangkok on return way.
Bali is also a good place for swimming and sunbathing but comparatively higher cost.

I have no idea about the cost in CNY next year. All current packages are valid till Oct 2010. Phuket is in peak season from Nov to Mar. The room rate is higher than low season. For example of Island Villa in Sheraton Grande Laguna, low / high seasons and X’mas holiday in the past year was HK$18XX / HK$50XX and HK$13XXX. In addition with air ticket, surcharge is required. I think you could book the air ticket now to confirm your exact travel period. Hotel reservation could be done in less priority.
