My maid has not arrived yet. But here is what I plan to do:
First you need to buy a food weighing machine at home (less than HK$100, for home cooking)
I will take her to the wet market a few times to buy food together after she arrives. Then I will weigh each type of food with her together and jot down the unit price per kg. One copy for her and one copy for me. I will tell her it's to prevent her from being cheated and to make sure she (and me together) pick the right shop in the future. And of course she will have to jot down everything she buys every day lah.
This way she will know that I know what's the market price. And I will tell her that I will randomly check (by weighing the food) her grocery and what she jots down in the futre.

I have the same problem as you.
I ask her to go to wellcome. At the very begining, she has many excuses to show me that it is not OK to buy in Wellcome, eg.

No way, she lied. Half an hour for receipt? Impossible.
Park N Shop or Welcome might be more expensive, but the qiality is so much better. Your maid doesn't need to spend a lot of time washing the vegetables.
