I just back from Australia. I can tell you that it is quite easy to visit Australia by yourself. You can book everything, including local tour via internet in advance before leaving HK. You know, my cousin also just back from Australia, they joined the a tour and applied stay behind as same as what you planned. They tell me that they wake up very early in every morning and the schedule is very tight, which I think your baby can't handle. Besides, it costs you HK$1500 each person for stay behind. Therefore, it not worth to do so.

I suggest you Better " FREE WALK", more fexible and local tour is very easy, ask the information desk in your hotel when check in, they can arrange everything, of couse, u need to prepare $$$.
