I've also made a jar of garlic in Japanese rice vinegar. In the first few weeks, the garlic is green. After a month, it turns back to yellow. The taste is not as terrible as what I thought. It tastes good if it is added to soup.
My daughter (~ 4 yrs) had runny nose and I add one teaspoon of the vinegar to her nose. The next day, she gets well. It's amazing.
