I also is FT mama, Don't worry, my new helper also is first time work in Hong Kong, I just spend about 2 weeks to train her. but so far is o.k. only cooking until now she can not do very well, sometime I need to cook or remind her how to cook. of couse she is not chinese. so her chinese cooking not good as me.. I want to suggest you to set a timetable to her then every part to teach her.

Do you think she will change in the 2nd contract? I had the same problem with the one I just fired.
I cannot guarantee you can get a better one but at least get a chance, rather than no chance.
The new one I am expecting does not have HK experience as well. I am prepared to train.
For new comers, they are ok to take weekday off or pay in lieu as many of them need $$. New comers would appreciate your kindness more. Those old HK would take for granted.
My first helper was in HK only 2 years when I hired her. She was very happy to work on sunday and I paid her. She was not happy when we wanted her to take sunday off after a few years.
That's why she could retire after 8 years with me. We missed her very much.
