Would like to share a Tiramisu in Grand Hyatt style :
Grand Hyatt Tiramisu
Cheese (Mascarpone) – 250 g (1 small box)
Egg – 2 (separate into egg white and egg yolk)
Sugar – 35g
Coffee wine mixture (you may want to have more for dipping the lady fingers; recommend to add 1.5 of below portion)
Coffee powder – 3g
Hot water (for dissolving coffee) – 50g
Coffee wine – 50 g
Almond wine – 15 g
Orange wine – 5 g
Lady fingers (around 10 pieces)
Gelatine powder – 5g (in case you like to make it as “cake”)
Water – 30g
Dissolving the gelatine powder with water and bathe under hot water to make it liquid.
1. mix cheese (just gently) with egg yolk
2. Beat egg white till solid (adding sugar after you start beating it for around 1 minute – when you see the bubbles)
3. Mix 2 with 1 very gently (finished!!)
4. If for making cake, after adding the egg white, need to add gelatine water; and mix it in one go (also very gently). If you mix it too much, it will be less soft – so no good!
5. Dip lady fingers with coffee water and then put it as layer with cheese mixture
6. Add the coco powder before eating
