For education funding purpose, insurance plan may not be a good choice. It's because I think your son don't have liability yet (need to support family, repay mortgage, etc) and therefore there is no need for any insurance coverage. Buying an insurance plan for education fund is just like paying extra fees for something you don't need.
I would suggest you consider some pure investment plan instead.
